5-Minute Healthy Banana Pudding with Cottage Cheese

This whipped Healthy Banana Pudding made with cottage cheese, banana, and a touch of maple syrup is my new favorite protein-packed snack! A quick blend gives it that irresistibly thick and creamy texture you’ll adore. I’m obsessed with it topped with crushed graham crackers for crunch, but my kids love it as a fruit dip. TBH, this recipe is so simple that I debated not posting it. Then I shared it with a few trusty friends who made it on their own. They promptly reported back that they were obsessed and said I’d be crazy not to share it. FINE!

What I learned from recipe testing

  • Blending ONLY until combined is the secret to thick, whipped banana pudding. Other recipes for healthy banana pudding don’t mention this key aspect, but I found during recipe testing that this is crucial for texture. (The heat from blending thins out the mixture real quick, just like it does with a smoothie.) You want to see no visible curds and then stop. The first time I tested this, I blended, walked away to fold a bathing suit, and came back to liquidy, far less enjoyable pudding. Big mistake!
  • I tested this recipe with three different cottage cheeses: Daisy brand 2%, Good Culture 4%, and Trader Joe’s 2% . Daisy and Good Culture are thicker and have simpler ingredients (no gums/stabilizers), and I actually preferred their texture. Full fat and low fat both work (but don’t use fat free, some fat helps with pleasant mouthfeel).
  • Sweeten to taste: Different brands of cottage cheese and varying ripeness of bananas impact how sweet this tastes; I developed this recipe using 2 tbsp maple because I found it balanced the tangy flavors best.

Instructions

  1. Place bananas, cottage cheese, maple syrup, and vanilla in a blender or Nutribullet. Blend just until smooth and creamy (over-blending will make it thin and less whipped in texture). It should be thick and spoonable. Taste mixture and make sure sweetness level is good, stirring in more maple by hand to taste vs blending, if needed.
  2. Pour into 3-4 containers if desired. If your mixture is thinner (some brands are), I like to chill it in the freezer for 10 minutes before eating it–it’s super good extra cold!  You can enjoy right away, but it will thicken more and taste even more whipped after it’s sat in the fridge for a couple hours. Serve topped with crushed graham crackers and whipped cream. Also delish topped with peanut butter!
  3. Store in the fridge for up to 4 days.


Notes

*You want your bananas pretty ripe with lots of brown spots for natural sweetness, but not totally dark brown like you’d use for banana bread.
