This sheet pan chicken fajitas recipe comes together quickly for a delicious and healthy weeknight meal. Chicken tenders, a mix of bell peppers and onions are roasted to perfection and wrapped together into tortillas for a recipe the whole family will love.
What Are Fajitas?
Fajitas are a Tex-Mex dish typically made up of a stripped protein (usually chicken or beef) and stripped vegetables (bell peppers and onion) marinated in the flavors of a Mexican-inspired seasoning. They are then served in a flour or corn tortilla with toppings.
This chicken fajita recipe is made on a sheet pan for simple cooking and easy clean-up. No grilling required!
Ingredients in Sheet Pan Chicken Fajitas
Chicken tenders – I buy pre-cut chicken tenders since you’ll end up having to cut your boneless, skinless chicken breasts into strips anyway. If you cannot find pre-cut chicken tenders feel free to use boneless, skinless chicken breasts and slice them into strips.
Olive oil – for coating chicken and veggies.
Homemade fajita seasoning – chili powder, garlic powder, onion powder, cumin and salt are combined to make a fajitas seasoning for chicken. Add a pinch of cayenne pepper for a little kick of heat if desired.
Bell peppers – I use 3 varieties (red bell pepper, yellow bell pepper and green bell pepper) but feel free to use 3 of the same or different varieties.
Onion – you can use yellow or red onions but be sure to slice them for even cooking.
Flour tortillas or corn tortillas – wrap up your sheet pan chicken fajitas into tortillas! Use corn tortillas if gluten-free.
How to Make Sheet Pan Fajitas
STEP 1: MAKE HOMEMADE FAJITA SEASONING
In a large bowl combine all fajita seasoning ingredients.
STEP 2: COAT CHICKEN AND VEGETABLES
Add chicken and olive oil to fajita seasoning and toss to coat. Add in bell peppers and onion and stir to combine.
STEP 3: ROAST
Spread chicken, bell peppers and onion on a baking sheet. Bake in oven for 15 minutes. Turn on broiler and broil for 2-3 minutes or until chicken and veggies have browned. Watch carefully to ensure they don’t burn.
STEP 4: ASSEMBLE
Serve chicken and veggies in warmed tortillas with desired toppings.
What toppings do you put on a fajita?
Ultimately what toppings you put on your sheet pan chicken fajitas is up to you but here are some delicious ideas!
- Sour cream – a dollop of sour cream is always a good idea. Greek yogurt works too.
- Lime wedges – give a little squeeze of lime juice onto your fajitas before serving
- Guacamole – use store-bought or homemade. Sliced avocado is also a great option!
- Salsa – Again, you can use store-bought or homemade
- Cilantro – sprinkle a little cilantro onto your sheet pan fajitas or omit if you don’t like cilantro
- Shredded Cheese– buy pre-shredded or shred yourself. Cheddar works great or try a more traditional Mexican cheese like cotija.
- Green onions – green parts only, sliced
How to Store + Reheat Leftovers
Fridge – store your leftovers in an airtight container. Reheat in the oven, on stove top or in the microwave.
Freezer – I personally would not recommend freezing this recipe.

Homemade Fajita Seasoning:
- 2 tbsp chili powder
- 1 tsp garlic powder

For the chicken fajitas:
- 1 1/2 lbs chicken tenders, sliced lengthwise
- 2 tbsp olive oil
- 1 red bell pepper, seeded + sliced
- 1 yellow bell pepper, seeded + sliced
- 1 green bell pepper, seeded + sliced
- 1 small yellow onion, sliced
- 8–10 corn or flour tortillas
- Toppings: cilantro, guacamole, salsa, avocado, lime, sour cream, green onions etc…
- Preheat oven to 400 degrees F.
- Drizzle a little olive oil onto a baking sheet or spray with cooking spray.
- In a large bowl combine all fajita seasoning ingredients.
- Add chicken and olive oil to fajita seasoning and toss to coat.
- Add in bell peppers and onion and stir to combine well.
- Spread chicken, bell peppers and onion on a baking sheet. Bake in oven for 15 minutes.
