The BEST Honey Mustard Chicken
For as long as I can remember I have loved all things honey mustard. I was that kid who dipped their chicken fingers in honey mustard sauce. Never a ketchup kid. Always a mustard kid. And still, as an adult I’d choose mustard over ketchup!
What I love about this honey mustard chicken recipe is that it can easily be meal prepped in a delicious honey mustard marinade and stored in the fridge or freezer until you’re ready to cook it. In fact, the longer it sits in the marinade, the better it tastes! You also have the option to either bake it in the oven or grill it on the stove-top or BBQ. Most likely, you already have a bunch of the ingredients on hand!
Ingredients in Honey Mustard Chicken
- Chicken Thighs – I like using boneless skinless chicken thighs but you could also use bone-in chicken thighs. Skinless chicken breasts will also work well, you’ll just need to adjust your baking/grilling time accordingly.
- Dijon Mustard – I like using Dijon for this recipe but you can use any smooth or whole grain mustard you prefer.
- Honey – use raw honey. If your honey has hardened, place in a bowl of hot water.
- Garlic – one minced garlic clove. Ideally use fresh garlic.
- Olive oil – this helps to prevent the chicken from sticking to the pot or pan
- Salt + Pepper – to amplify flavors. Feel free to reduce salt if you’re watching sodium levels.
How to Make Honey Mustard Chicken
STEP 1: MAKE HONEY MUSTARD CHICKEN MARINADE
Combine dijon mustard, honey, garlic, olive oil and salt + pepper in a medium bowl.
STEP 2: ADD IN CHICKEN + MARINATE
Add in chicken thighs and coat well. Cover bowl (with a top or plastic wrap) or place all ingredients in a ziplock bag and allow to marinate in fridge for at least 4 hours. The longer the better!
To Grill or Bake?!
These honey mustard chicken thighs can either be baked in the oven or grilled on the stove-top (instructions here) or on the BBQ*.
GRILL: Grease or spray grill or grill pan with cooking spray. Bring to high heat (roughly 450 degrees on BBQ). Add chicken directly to grates/pan and cook for 5-7 minutes per side. Test with a meat thermometer and once internal temperature has reached 165°F, your chicken is ready.
BAKE: Preheat oven to 400°F. Pour chicken and all of the marinade into a shallow baking dish and bake for 30-35 minutes or until chicken’s internal temperature has reached 165°F.
*Remove chicken from fridge 30 minutes before cooking. Bringing chicken to room temperature (or not cold) helps chicken to cook evenly
Store Leftovers
Storage: keep leftovers in an airtight container in the fridge for up to 3 days.
Freeze: Freeze raw chicken in marinade in a ziplock bag in the freezer for up to 3 months. Thaw and cook as directed.
