You really can’t go wrong with sweet potatoes. They’re such a versatile vegetable that are also a great source of nutrition. I like to keep them in the house at all times because they can be used in both sweet and savory dishes and everyone in my family loves them!
But before we get into some sweet potato recipes, I wanted to share bit more about this nutritious veggie and why you’ll want to keep them in your home too!
Sweet Potato Nutrition
Sweet potatoes are a fantastic root vegetable to turn to when you’re wanting to improve your nutrition. They’re a great source of vitamins and minerals including vitamin C, vitamin A, potassium and even fiber!
One cup of mashed sweet potato contains 19% of your daily iron intake which is pretty impressive! All the more reason to enjoy these sweet potatoes recipes.
How to Store Sweet Potatoes
Before you’ve cooked your sweet potatoes you’ll want to keep them stored in a cool, dark place away from any fruit that may cause them to start sprouting shoots.
If stored properly they will last for 3-5 weeks.
Once cooked you’ll typically want to enjoy your sweet potatoes within 3-5 days. Just store in an airtight container in the refrigerator.
How to Roast Sweet Potatoes
To make your basic roasted sweet potatoes follow these directions:
- Preheat oven to 425 degrees F.
- Spread out 1 large sweet potato cut into cubes on a parchment or foil lined baking sheet.
- Drizzle with olive oil or melted butter
- Option to sprinkle with spices (cinnamon, garlic powder, cumin, paprika or even chili powder are all great) and salt and black pepper.
- Roast for 30-40 minutes, flipping halfway through or until edges are crispy and inside is tender.
- Enjoy!
