OBX 2025 with Friends

Over Memorial Day weekend, I went with some friends to the beach. Here’s the recap!

OBX: The Late Spring Version

My friend Katie’s family owns a house in Corolla, NC at the top of the Outer Banks. You might recall we did a trip to her house in the fall, when we were bundled up in down jackets and it was too cold for more than a beach walk. We came home and immediately picked a warm weather date to return. We enjoyed three sunny days there this past weekend!

OBX 2025 Trip Recap

Thursday

We drove down on Thursday after I went to Birch’s class picnic. We made great time and after unpacking, hit up the grocery store so we could spend happy hour on the beach.

Lemon Shrimp Angel Hair

For dinner, I made a lemony pasta dish with shrimp from the fish market, plus a lemon pesto I found at Trader Joe’s in Cville. We also added cherry tomatoes, green beans, and lots of Parmesan.

Friday

Bagels for breakfast

Beach walk

After we did the NYT games, we hit the beach for a walk!

Beach Day

We were so thankful that we had three amazing beach days. While it was still a little too cold for swimming in the ocean, we did a lot of walking, reading, and sunning on the beach!

I brought my umbrella but ended up sitting in the sun for warmth most of the time. I also read Sean’s book Isle of Hunger while we were there!

Dinner at Upside

We decided to cook twice and go out twice, so we finished our beach day and headed to Upside for dinner! It was too cold for the porch, but we enjoyed the bar area.

We enjoyed ice cream, board games, and/or a movie every night. Sean and I brought our matching BHI hoodies!

Saturday

Beach Day 2.0

Healthy-ish lunch

Cottage cheese + salad plus AG1!

We ended the day with a hot tub soak after we needed to warm up a bit from all the breezes.

Dinner at North Banks

We decided to do our two dinners out in the middle of the trip due to the weather forecast, so we went to North Banks for seafood.

Dress up time!

There was a bit of a wait, so we did some window shopping and visited the bookstore.

I had the best bourbon drink called The Paper Crane.

And a flounder topped with crab that was incredible!!

Sunday

On our final day, Sean, Katie and I went for a morning run. Felt good to get my heart rate high!

We had Kodiak cakes to refuel!

We did lots of BEACH for the rest of the day! Again, so glad it didn’t rain.

We hit up Whalehead Brewery for happy hour on Sunday. It was a cool spot where you could pour your own glasses / samples.

Blackened Drum + Grits

For dinner I made blackened drum, chile cheese grits, and asparagus.
